The yellowtail (buri in Japanese) caught in the coldest season is known as an especially delicious fish which is generally called kanburi. The town of Ine is one of the three largest fishing locations for winter yellowtail in Japan. Meanwhile, there are several restaurants in Ine that serve fresh yellowtail dishes. In particular, yellowtail shabu-shabu is a hot topic in Ine in the winter. It is particularly delicious to put slices of fresh yellowtail into boiling kombu soup and eat it with ponzu or sesame sauce.
